For those of you who are looking for some applesauce recipes, these applesauce muffins are quick and easy to make and they smell divine when they come out of the oven. You can make the applesauce from scratch I often just buy it ready made, which makes this muffin recipe really quick and easy. Using honey, in place of sugar, makes this muffin recipe a healthier option.
Buying ready-made applesauce can be expensive, especially if you buy it in the gourmet section. I cheat a little - I buy my mine in the baby food section! It is much cheaper and it is just the same thing as you would pay twice the price for two aisles over.
Another quick tip for using applesauce in muffins is to buy cans of pie apples and cook them down. They have already been precooked, so it doesn't take long to get them to that sauce consistency. After that, you can just add your spices to the mixture and Bob's your uncle, and Fanny's your aunt!

Homemade Applesauce Recipe
Some cooking apples, sliced but not peeled
1/4 cup honey for every 4 apples
Cinnamon, nutmeg, allspice, cloves (use a combination you like)
Instructions:
Cover apples with water, add honey and spices to taste
Let water come to a boil, then simmer gently until done
Depending on the types of apples you have used this could be from 25-45 minutes, or even longer.
Sieve through food mill
Note: Sweetness and strength of honey varies with the type used. For cooking and baking, especially for homemade desserts, acacia and black locust honey are light and flavorful. Buckwheat honey is very strong and dark and can be made in homemade bread recipes. Clover honey is quite sweet, so use it sparingly. Follow your own taste - do some research and some experimenting. However, whatever honey you use, it will be a lot healthier than using sugar.
Applesauce Muffin Recipe
3 cups of plain homemade applesauce (without the spices). See recipe above 2 large eggs 3/4 cup olive oil 1 cup brown sugar 4 1/2 cup almond flour 3 teaspoons baking soda 3/4 teaspoon salt 3 teaspoon cinnamon 1/4 teaspoon ground cloves 3/4 teaspoon allspice
1 cup sultanas
Instructions:
Get a large bowl and add 3 cups of applesauce
Add eggs, oil, and sugar
Then add flour, baking soda, salt, cinnamon, cloves, allspice and sultanas
Bake in muffin tins at 175°C (340° F) for 20 minutes
