These delicious apple and raisin muffins can be enjoyed by the whole family. They are made with three powerfully healthy grain products; wholemeal flour, wheat germ and bran. Bran is considered just a byproduct. It is what is stripped off whole grains when refined grains are milled. Talk about throwing the baby out with the bath water! Bran is therefore considered unimportant as a food source and cheap to buy but contains vitamins and minerals considered optimal for good health.
Wholemeal flour is a good flour without all the goodness stripped from it and bleached to hell and back and of course wheat germ, which has loads of Vitamin E, magnesium, zinc, thiamin, folate, potassium, and phosphorus.
Apples are also very good for you. Although low in Vitamin C apples are packed with antioxidants that are said to reduce the risk of colon cancer, prostate cancer and lung cancer. Apples are also thought to help with heart disease, weight loss and controlling cholesterol.
And then we have the raisins. These are a great source of energy and with the high potassium content in raisins that help maintain a proper blood pressure. The high fiber content and the presence of tartaric acid helps regulate the colon. Like apples, raisins are also full of antioxidants that help protect the heart, prevent cancers and encourages weight loss.
With the addition of bran, wheat germ, wholemeal flour and honey, instead of sugar, these apple and raisin muffins are really healthy!
Apple Raisin Muffin Recipe
1/2 cup water 1/2 cup honey 2 tablespoons brown sugar 1 teaspoon baking soda 1/2 cup milk 1 cup raisins, chopped 1 large apple, grated 1 cup wholemeal flour 1 cup bran 1 cup wheat germ 1 teaspoon baking powder 1 heaped teaspoon mixed spice pinch of salt
Instructions:
Heat water, honey, and raw sugar. Add baking soda and stir
Add milk, raisins, and apple
In a bowl, place flour, bran, wheatgerm, baking powder, mixed spice and salt
Pour in warmed mixture and combine
Spoon into prepared muffin tins and bake at 180 degrees C. (360 degrees F.) for 15 minutes or until done
