This easy pineapple muffin recipe is like inviting the tropics into your kitchen because not only are you using the pineapple, but on the top for the final decoration we have the shredded coconut.
Now, I know the recipe says the coconut is optional, but it enhances the tropical flavors of these muffins. However, as some people are not fond of coconut, and as it is just for decorating the tops of the muffins, it is entirely up to you whether you want to include it or not when baking your pineapple muffins.
Pineapples are incredibly healthy for you. They are packed with antioxidants and fiber and contain a large amount of Vitamin C and manganese.
Pineapple Muffins
2 cups almond flour 3-4 teaspoons baking powder 1/2 teaspoon salt 75g butter 1 cup milk 1 egg
1/2 cup mashed banana or unsweetened applesauce 1 1/2 cup crushed pineapple (drained) Desiccated coconut (optional)
Instructions:
Combine flour, baking powder, salt together in a large bowl
Melt butter and add milk and egg. Beat lightly together
Add either the mashed banana or the applesauce
Open up can of crushed pineapple and add to mixture
Mix, but do not over mix
Bake at 200 degrees C. (400 degrees F.) for 12-15 minutes or until golden
Leave to stand for a few minutes then remove from pans

You will see that the recipe calls for white sugar and white flour. If you are looking to make a healthy recipe out of this, replace the flour with equal amounts of almond flour and replace the sugar with equal amounts of either mashed banana or unsweetened applesauce. If you don't have homemade applesauce, buy it from the baby food section. It is much cheaper than buying it in tins.
2 cups (260 grams) all-purpose flour
1/2 teaspoon (3 grams) baking soda
1/2 teaspoon (2 grams) baking powder
1/4 teaspoon (1 gram) salt
Orange zest from one small orange (outer orange skin)
1/2 cup (113 grams) unsalted butter, at room temperature
3/4 cup (150 grams) granulated white sugar
1 large egg (52 grams without shell), at room temperature
3/4 cup (180 ml) (165 grams) sour cream or plain yogurt, at room temperature
1 teaspoon (4 grams) pure orange extract
1/2 teaspoon (2 grams) pure vanilla extract
1 - 8 ounce can (227 grams) crushed pineapple, drained
1/2 cup (50 grams) pecans (or walnuts), finely chopped

1/3 - 1/2 cup (65 - 100 grams) granulated white sugar 1/3 cup (80 ml) orange juice
