Cheese muffins are my favorite muffins to make as I prefer savory cakes and food to sweet foods. I also like the fact that you can add so many different ingredients to a basic cheese muffin recipe and end up with a different taste altogether. I make these so often, I could make them in my sleep!
You can ring the changes and add a 1/2 red onion, or leek, bacon, slices of ham, or if you want to get really posh, smoked salmon. For a little heat to your muffins, you could also add either cayenne pepper with the cheese, or a small amount of red chili.Â
Don't overdo the chili though, as this can be very unpleasant to some. To make sure your muffins are always tender, either add a tablespoon of natural yogurt to your mixture (I use Greek yogurt) or use a tablespoon or two of the whey that comes to the surface of the tub. This makes really tender and delicious muffins, no matter whether they are savory or sweet muffins.
The cheese you use is also important. If I can get it, I use English Cheddar cheese. If not, I use another strong, well-matured hard cheese.
This is definitely a very versatile muffin recipe that also freezes well.
Easy Cheese Muffin Recipe
​2 cups self-raising flour 1/2 teaspoon salt 1 teaspoon mustard powder 1 cup grated cheese 1 cup milk 1 egg
Instructions:
Sift dry ingredients together and add the cheese
Beat the egg and milk together, and add to the flour mixture
Do not over mix
Spoon into greased muffin trays
Bake at 220°C (430°F) for 12-15 minutes
