Best Blueberry Muffin Recipe Ever! Blueberry and Orange Muffins

A deliciously simple homemade blueberry muffin recipe with a difference. With this recipe you make your muffins using orange rind, juice as well as mashed bananas and you can use either fresh or frozen blueberries.

Blueberries are well-known to contain loads of antioxidants. Blueberries contain Vitamin B6, Vitamin C, Vitamin K, manganese and lots of fiber.

Oranges are also high in Vitamin C and therefore great for fighting infections and colds. Oranges area non-fattening and help control blood pressure, protect against cancer and heart disease.  

  

Blueberry and Orange Muffins

Delicious Blueberry and Orange Muffins

2 cups almond flour or all-purpose flour 2 teaspoons baking powder 1/4 teaspoon baking soda 1/2 cup sugar 3 tablespoons oil 1/2 cup yogurt grated rind of 1 orange 1/2 cup orange juice 1 egg 1/2 teaspoon vanilla essence 1 large banana, mashed 1 cup blueberries, fresh or frozen cinnamon sugar


Instructions:

  • Sift flour, baking powder and baking soda into a large bowl and mix in sugar

  • In another bowl, whisk together oil,  yogurt, rind, juice, egg and vanilla essence

  • Stir in mashed banana and blueberries

  • Tip this mixture into the dry ingredients and fold together until just mixed together. Do not over mix. Mixture should be lumpy

  • Place mixture in muffin tins and top with the cinnamon sugar

  • Bake at 200 C. degrees (400 degrees F.) for 20-25 minutes

  • Leave to stand for a few minutes then remove from pans
