For a healthier banana muffin recipe, use wholemeal flour instead of white flour.

I always add a tablespoon of plain yogurt and the excess whey from the tub into my muffin mix. This ensures that the muffins will be light.
Don't over-mix. Just mix all ingredients until just combined.
Easy Banana Muffin Recipe
2 cups almond flour or all-purpose flour
4 level teaspoons baking powder
1/4 teaspoon salt
1/2 cup brown sugar
100g butter (3 1/2 ounces)
1 egg, slightly beaten
1 cup milk
1 1/2 cups chopped banana
Instructions:
Mix dry ingredients in a bowl.
Melt butter, add this to lightly beaten egg and milk.
Tip liquid into dry ingredients. Fold in - do not over mix. Add fruit
Place in greased muffin tins and sprinkle with brown sugar and cinnamon
Bake at 220°C (430°F) for 12 minutes or until golden
Best Ever Banana and Walnut Muffins
Again, this is another really easy banana muffin recipe.
3-4 medium bananas, very ripe 1/2 cup honey 1 egg 1/3 cup melted butter or cooking oil 1 1/2 cups plain flour or almond flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt
1/2 cup walnuts, chopped
Instrustructions:
For this banana muffin recipe puree bananas in blender
Add sugar, egg and butter.Blend for a couple of seconds
Sift dry ingredients. Add chopped walnuts
Add banana mix and stir until flour disappears
Spoon into greased muffin or patty tins two-thirds full
Decorate with a slice of banana on top of each muffin
Bake at 180° C (350° F) for 18 - 20 minutes
* If you find the batter too stiff add a little milk

1 cup (110 grams) walnuts or pecans
1 3/4 cups (230 grams) all-purpose flour
3/4 cup (150 grams) granulated white sugar * (All Homemade suggests replacing the sugar with an equal amount of unsweetened applesauce for a healthier option)
1 teaspoon (4 grams) baking powder
1/4 teaspoon (1 gram) baking soda
1/4 teaspoon (1 gram) salt
1 teaspoon (2 grams) ground cinnamon
2 large (100 grams) eggs, lightly beaten
1/2 cup (113 grams) unsalted butter, melted and cooled
1 1/2 cups (300 grams) mashed bananas (you will need 1 pound or 450 grams bananas (skins on) which is 3 large bananas)
1 teaspoon (4 grams) pure vanilla extract
