2 Easy Banana Muffin Recipes

Two easy banana muffin recipes that take no more than 15 minutes from start to finish. We have also given you a banana and walnut recipe as part of our healthy recipes. You can substitute bananas for apples for either recipe.
Apples are very good for you. Full of fiber and antioxidants they help with weight-loss, protect your heart and colon against disease. Although apples are low in Vitamin C bananas aren't and they are also one of the best sources of Vitamin B6 and other minor Vitamins from the B group.
Bananas contain antioxidants that protect against clogged arteries, heart disease and Alzheimer. Studies in Sweden showed that women who had 5 bananas week in their diet halved their chances of developing renal cancer due to the presence of pectins in the fruit.
For a healthier banana muffin recipe, use wholemeal flour instead of white flour.

I always add a tablespoon of plain yogurt and the excess whey from the tub into my muffin mix. This ensures that the muffins will be light.
Don't over-mix. Just mix all ingredients until just combined.
Easy Banana Muffin Recipe
2 cups almond flour or all-purpose flour 4 level teaspoons baking powder 1/4 teaspoon salt 1/2 cup brown sugar 100g butter (3 1/2 ounces) 1 egg, slightly beaten 1 cup milk 1 1/2 cups chopped banana
Mix dry ingredients in a bowl.
Melt butter, add this to lightly beaten egg and milk.
Tip liquid into dry ingredients. Fold in - do not over mix. Add fruit
Place in greased muffin tins and sprinkle with brown sugar and cinnamon
Bake at 220°C (430°F) for 12 minutes or until golden
Best Ever Banana and Walnut Muffins
Again, this is another really easy banana muffin recipe.
3-4 medium bananas, very ripe 1/2 cup honey 1 egg 1/3 cup melted butter or cooking oil 1 1/2 cups plain flour or almond flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt
1/2 cup walnuts, chopped
For this banana muffin recipe puree bananas in blender
Add sugar, egg and butter.Blend for a couple of seconds
Sift dry ingredients. Add chopped walnuts
Add banana mix and stir until flour disappears
Spoon into greased muffin or patty tins two-thirds full
Decorate with a slice of banana on top of each muffin
Bake at 180° C (350° F) for 18 - 20 minutes
* If you find the batter too stiff add a little milk

Banana Muffins Recipe:
1 cup (110 grams) walnuts or pecans
1 3/4 cups (230 grams) all-purpose flour
3/4 cup (150 grams) granulated white sugar * (All Homemade suggests replacing the sugar with an equal amount of unsweetened applesauce for a healthier option)
1 teaspoon (4 grams) baking powder
1/4 teaspoon (1 gram) baking soda
1/4 teaspoon (1 gram) salt
1 teaspoon (2 grams) ground cinnamon
2 large (100 grams) eggs, lightly beaten
1/2 cup (113 grams) unsalted butter, melted and cooled
1 1/2 cups (300 grams) mashed bananas (you will need 1 pound or 450 grams bananas (skins on) which is 3 large bananas)
1 teaspoon (4 grams) pure vanilla extract
