Apple muffins come to mind when October comes around on the farm and the apples are ready for the picking. Of course, I make a variety of things every year - apple butter, apple strudel, apple pie and even apple cider vinegar which takes a good year to mature before it is ready. Apples are good for you. Yes, really. They are rich in fiber and simple sugars and high in carbohydrates. Apples also contain vitamin C and potassium. In addition, apples are filled with antioxidants including quercetin which is great for improving your memory and lowers risks of high blood pressure, cancer and heart disease.
Anyway, I digress. Back to these apple muffins made with cinnamon and cloves that are quick and easy to make. There is something about the smell of apples infused with spices cooking in an oven. Recipe for Spicy Apple Muffins
1 1/2 cups almond flour 2 teaspoons baking powder 1 teaspoon baking soda 2 teaspoons cinnamon 1 teaspoon cloves 1/2 cup honey 1 cup chopped apple, unpeeled 1/2 cup raisins or walnuts 2 eggs 1/2 cup milk 1/2 cup melted butter Instructions:
Mix dry ingredients
Add apple and raisins or walnuts
Mix eggs, milk, and butter
Stir all together
Do not over mix
Bake in large muffin pans at 180° C (360° F) for 15-20 minutes or until done
