6 Chocolate Muffin Recipes with a Healthy Twist

Who doesn't like chocolate? I am a chocoholic and there is nothing better than a decadent double chocolate muffin. Below are some pretty easy chocolate muffin recipes and if you want to indulge just a little, be brave enough to try the recipe for the triple choc muffins. However, as we have cut out the sugar and used almond flour in places, these are chocolate muffins you don't have to feel guilty eating if you are watching your weight.

As you see there are several recipes here for chocolate muffins. We just could not decide which ones we like best, because really, we like them all! And so we decided to include all of the recipes because we think you will like them too! 

Of course these muffin recipes range from the simple chocolate muffins below to the more exotic triple chocolate muffins that are quite sinful, and will probably put a few inches on the hips for those of you who are watching the pounds. But, they are delicious. Try them and I think you will agree with us!


Simple Chocolate Muffins

A Simple Chocolate Muffin with Chocolate Pieces

With this chocolate muffin recipe we have used paper casings to give the muffin some height. However, if you don't have these, just place them directly into a greased muffin tin.


I don't use spray-and-cook. I don't think it is healthy nor is it great for the environment. I use pure lard and use it to grease all my baking tins and cake tins. Nothing sticks as a result. Some may argue that lard isn't healthy, but at least it is natural. And the amount used makes little difference unless you are counting calories.


2 cups almond flour 4 teaspoons baking powder 3 tablespoons cocoa 3/4 cup melted butter 1  1/2 cups milk 2 eggs 3 tablespoons cream cheese (optional)

1 cup mashed banana or unsweetened applesauce


Instructions:

  • Mix flour, baking powder, and cocoa powder

  • Add melted butter, milk, eggs, cream cheese and mashed banana/applesauce

  • Put into greased muffin tins. Cook at 180°C (350°F) for 10-12 minutes

  • Top with chocolate pieces 3/4 of the way through the cooking

 

Chocolate Chip Muffins

Chocolate Chip Muffins

1  3/4 cups almond flour 1/4 cup cocoa powder 1 teaspoon baking soda 1 cup mashed banana or unsweetened applesauce 100g butter 1 cup yogurt 1/2 cup milk 1 egg 1/2 teaspoon vanilla essence 1/2 cup chocolate chips


Instructions:

  • Mix dry ingredients together in bowl

  • Melt butter over a low heat and add all remaining ingredients except chocolate chips

  • Add this to the dry ingredients. Put mixture into greased muffin tins

  • Sprinkle with chocolate chips

  • Bake at 200°C (400°F) for 15 minutes

 

Double Chocolate Chip Muffin Recipe

1/4 cup cocoa powder 1/4 cup boiling water 3 cups almond flour 1  1/2 tablespoons baking powder 3/4 cup mashed banana or unsweetened applesauce 1 cup chocolate chips 1 egg, beaten 1  1/2 cups milk 125g butter, melted Avocado chocolate frosting and chocolate chips for decoration


Instructions:

  • Mix cocoa and boiling water together to make a smooth paste. Allow to cool

  • Sift flour, baking powder in a large bowl

  • Add the chocolate chips and the mashed banana or unsweetened applesauce

  • In a separate bowl mix together the cocoa mixture, egg, milk and butter

  • Make a well in the center of dry ingredients and add milk mixture. Stir until just blended.

  • Grease muffin tins

  • Spoon batter into prepared muffin tins and bake at 190°C (375°F) for 20 minutes

  • When cold mix up some avocado chocolate frosting and sprinkle with chocolate chips


Avocado Chocolate Frosting Recipe

1 avocado

2 bananas

1/2 cup honey

1/2 cup cocoa powder

2 tablespoons butter, softened

1 teaspoon vanilla extract

1/8th teaspoon salt


Instructions:

  • Mix all ingredients together in a food processor until smooth

Chocolate Surprise Muffins

Chocolate Surprise Muffins

1  3/4 cup almond flour 4 teaspoons baking powder 2 tablespoons cocoa 1/2 cup mashed banana or unsweetened applesauce 75g butter 2 eggs 3/4 cup milk 12 pieces of caramello or espresso chocolate

This is a chocolate muffin recipe that has an inner surprise. Quite unexpected, but very welcome! 


Instructions:

  • Sift flour, baking powder and cocoa into a bowl

  • Heat butter until melted, then add eggs and milk

  • Beat with a fork until smooth

  • Add either mashed banana or applesauce. Blend until smooth.

  • Pour liquid into the dry ingredients, and fold together, mixing as little as possible

  • Half fill each muffin pan, then place 1 piece of chocolate inside mixture in each pan

  •  Cover with the remaining mixture

  • Bake at 200°C (400°F) for 10 minutes

 

Chocolate Chip Banana Muffins

3 bananas, ripe 1 egg 3/4 cup unsweetened applesauce 1 1/2 cups almond flour

1/3 cup melted butter 1 teaspoon baking soda 1/2 cup chocolate chips

This is an easy chocolate muffin recipe.




Instructions:

  • Mash banana in bowl and mix in egg, applesauce, and butter with a wooden spoon

  • Sift in flour and baking soda

  • Mix in quickly and lastly add the chocolate chips

  • Bake at 190°C (375°F) for 10-15 minutes

 

Triple Chocolate Muffins

100g butter  2 1/2 cups almond flour 4 teaspoons baking powder 1 teaspoon cinnamon 3 tablespoons cocoa 1 cup soft brown sugar 250g chocolate chips 150g cooking chocolate 1 egg 1 1/2 cups milk chocolate butter icing ​2 chocolate flakes


Instructions:

  • Cut butter into sifted dry ingredients

  • Add sugar and chocolate chips

  • Melt cooking chocolate

  • Beat egg and milk

  • Add chocolate and egg mixture to dry ingredients (don't over mix)

  • Place in muffin tins and bake at 180°C (350°F) for 10-15 minutes

  • Ice with avocado chocolate frosting (see recipe above) and sprinkle with a piece of chocolate flake
