3 Bran Muffin Recipes for Fiber and Health

A Delicious Bran Muffin Recipe with Apples




Apple Bran Muffins

3 heaped tablespoons butter 1/2 cup honey 2 eggs 1 teaspoon baking soda 2 cups milk 2 teaspoons cinnamon 2 teaspoons baking powder 2 cups almond flour 2 cups bran flakes 1 cup sultanas or chopped apple 1 lemon, grated rind and juice


Instructions:

  • Cream butter 

  • Add eggs and honey and beat

  • Dissolve baking soda in milk and add to mixture

  • Add rest of ingredients and mix together into paste texture

  • Ensure mixture is not too dry

  • Place in muffin trays

  • Bake on high temperature - 240°C (465°F) for 10-12 minutes



Bran Muffin Recipe Suitable for Diabetics




Cranberry Bran Muffins

1 tablespoon honey 1 tablespoon oil 1/4 cup water 1 egg 1 cup skim milk 1 cup bran flakes 1 teaspoon baking soda 1 cup wholemeal flour 1/2 teaspoon vanilla essence

You can make these bran muffins different way by adding different ingredients:

* 1/2 cup sultanas for Sultana Bran Muffins * 1/4 cup sultanas and 1/2 cup stewed apple for Apple and Sultana Bran Muffins * 1/2 cup chopped dried apricots for Apricot Bran Muffins

* 1/2 cup dried cranberries * 1 mashed ripe banana for Banana Bran Muffins

Instructions:

  • Gently heat honey and water and add milk

  • Add baking soda and stir

  • Add vanilla, oil and beat in the egg lightly

  • Put flour and bran into a bowl and mix in the liquid ingredients then fruit

  • Put into muffin tins and bake at 200° C (400° F) for 10 minutes
