3 heaped tablespoons butter 1/2 cup honey 2 eggs 1 teaspoon baking soda 2 cups milk 2 teaspoons cinnamon 2 teaspoons baking powder 2 cups almond flour 2 cups bran flakes 1 cup sultanas or chopped apple 1 lemon, grated rind and juice
Instructions:
Cream butter
Add eggs and honey and beat
Dissolve baking soda in milk and add to mixture
Add rest of ingredients and mix together into paste texture
Ensure mixture is not too dry
Place in muffin trays
Bake on high temperature - 240°C (465°F) for 10-12 minutes
Bran Muffin Recipe Suitable for Diabetics
1 tablespoon honey
1 tablespoon oil
1/4 cup water
1 egg
1 cup skim milk
1 cup bran flakes
1 teaspoon baking soda
1 cup wholemeal flour
1/2 teaspoon vanilla essence
You can make these bran muffins different way by adding different ingredients:
* 1/2 cup sultanas for Sultana Bran Muffins * 1/4 cup sultanas and 1/2 cup stewed apple for Apple and Sultana Bran Muffins * 1/2 cup chopped dried apricots for Apricot Bran Muffins
* 1/2 cup dried cranberries
* 1 mashed ripe banana for Banana Bran Muffins
Instructions:
Gently heat honey and water and add milk
Add baking soda and stir
Add vanilla, oil and beat in the egg lightly
Put flour and bran into a bowl and mix in the liquid ingredients then fruit
Put into muffin tins and bake at 200° C (400° F) for 10 minutes
