A Healthy Bran Muffin Recipe or Two - One Suitable for Diabetics

Bran that is used in muffins is the husk or inner casing of wheat and other cereal grains, removed during the refining of white flour. Bran is a source of dietary fiber and has a high Vitamin B and phosphorus content.

The next muffin bran muffin recipe can be made with either sultanas or chopped apples. Both go really well with the cinnamon.

Bran Muffins (1)

bran muffin recipe

3 tablespoons butter
225 g sugar
2 eggs
2 tablespoons golden syrup
1 teaspoon baking soda
2 cups milk
2 teaspoons cinnamon
2 teaspoons baking powder
2 cups plain flour
2 cups bran flakes
1 cup sultanas or chopped apple
1 lemon, grated rind and juice

Cream butter and sugar. Add eggs and golden syrup and beat. Dissolve baking soda in milk and add to mixture. Add rest of ingredients and mix together into paste texture. Ensure mixture is not too dry. Place in muffin trays. Bake on high temperature - 240°C (465°F) for 10-12 minutes.

Bran Muffins (2) - Suitable for Diabetics

1 tablespoon golden syrup
1 tablespoon oil
1/4 cup water
1 egg
1 cup skim milk
1 cup bran flakes
1 teaspoon baking soda
1 cup wholemeal flour
1/2 teaspoon vanilla essence
1/2 teaspoon Sucaryl liquid

You can make these bran muffins different way by adding different ingredients:

* 1/2 cup sultanas for Sultana Bran Muffins
* 1/4 cup sultanas and 1/2 cup stewed apple for Apple and Sultana Bran Muffins
* 1/2 cup chopped dried apricots for Apricot Bran Muffins
* 1 mashed ripe banana for Banana Bran Muffins

Heat golden syrup and water slightly and add milk. Add baking soda and stir. Add vanilla, Sucaryl, oil and beat in the egg lightly. Put flour and bran into a bowl and mix in the liquid ingredients then fruit. Put into muffin tins and bake at 200° C (400° F) for 10 minutes.
