5 Minute, No-Bake Coconut, Oats and Walnut Balls

Another healthy snacks recipe that is so easy, even the kids could have a go at making them.


From time to time, I like a sweet snack too, and these coconut balls fall into our healthy snacks recipes. Although there is some cooking involved, about 3 minutes - this is a no-bake recipe.​

Recipe for No-Bake Coconut and Walnut Balls


Using simple ingredients, honey, butter, grated apple, dessicated coconut, oats and walnuts this recipe makes 18 small balls that are finished off in the fridge to firm up. The kids will love them, and because you are using honey, instead of sugar, they are not overly sweet, and they are much healthier too.

2 oz (60 g) butter 1/4 cup honey 1 small apple, peeled and grated 1/2 cup desiccated coconut 1 tablespoon cocoa pinch salt 1 cup rolled oats 1/2 chopped walnuts 1/2 teaspoon vanilla essence 1/3 cup coconut, extra


Method:

  • Combine butter and honey in a saucepan and place over a low heat until honey and butter melt together

  • Remove from heat, stir in apple, cocoa and salt

  • Return to stove and cook slowly over a low heat for 1 minute, making sure it doesn't burn

  • Remove from heat and add rolled oats, walnuts and vanilla essence. Mix well

  • Divide into 18 equal-sized balls

  • Roll in the extra coconut

  • Place on a greased baking tray and place in the fridge until firm
