Keto Avocado Toast and Pine Nuts

Adding pine nuts to your avocado toast is giving this staple a luxury twist.
This healthy snack recipe is the posh version of avocado on toast. I don't know about you, but I love avocado pears.We used to have a huge tree in the bottom of our garden when I was growing up and these were large butter pears. Surprisingly, my mother grew the tree from a pip! It was the tree that kept on giving. Not only did we enjoy eating the avos but so did the fox terrier we had. He would wait for the pears to drop, then he would bury them and dig them up later once they were ripe. Smart dog!
Avocado pears are incredibly healthy for you. It is full of minerals and vitamins, including unusual vitamins such as Vitamin K which is important for blood clotting, bone metabolism, and regulating blood calcium levels. Because of the large component of fats in avocado pears it is an essential ingredient in those who are on the Keto diet. Avocado pears may also help those with high blood pressure. And let's not forget the health benefits of pine nuts. They are rich in monounsaturated fats, Vitamin E and magnesium which all work to protect the heart against disease.
Recipe for Avocado Pear Toast and Pine Nuts
Here we have slices of brown bread toasted, spread lightly with good, better, butter topped with chunks of avocado. If you wanted to mash the avocado pear, you could do that too.Toast the bread. Wholegrain is best. Homemade bread even better.
Boil some eggs until they are not quite hard boiled (See our page on how to cook eggs correctly)
Slice the avocado and place on the buttered toast
Peel, slice and place eggs on top
Sprinkle with pine nuts and some cracked black pepper
