Feta Cheese and Watermelon Sandwiches

Perfect for a healthy summer snack.


One of the best things about the summer is watermelon. No matter how old one is, eating watermelon always brings back a flood of childhood memories of chopping down into juicy slices that were always wider than one's face!

Quick and Easy Recipe for Feta and Watermelon Sandwiches


This is one of my favorite summer snacks. It is very healthy and refreshing, and surprisingly, the marriage of watermelon and feta cheese is made in heaven. I enjoy the pepperiness of the arugula, although if you don't, you can sprinkle some chopped mint over the top, instead.


If you are on diet, watermelon is a good choice. With 45 calories in a cup of diced watermelon, and less than 1 gram fat and protein, and only 11 grams of carbohydrates, one can eat a slice or two of watermelon without feeling guilty.


These are my watermelon sandwiches.

To make your feta and watermelon sandwiches,place some washed arugula on a plate, cut two wedges of watermelon and remove as many pips as possible. Then cut a thick slice of feta cheese and cut it to fit your watermelon wedges. Place the feta cheese in between the watermelon.

Place your watermelon and feta sandwich on top of the arugula and drizzle with some balsamic vinegar. You need the thick balsamic vinegar - the best you can afford. It should be from Modena, which is the home of true Italian balsamic vinegar.


You can squeeze a little bit of lime juice over the watermelon at the end, if you so desire, but this is entirely optional.
