Nine Bean Soup Mix

1 pound pearl barley
1 pound dried black beans
1 pound dried red beans
1 pound dried pinto beans
1 pound dried navy beans
1 pound dried great Northern beans
1 pound dried lentils
1 pound dried split peas
1 pound dried black-eyed peas

Combine all beans; divide into 10 two cup packages for homemade gifts.

Bean Soup Recipe

2 cups Nine Bean Soup Mix
2 quarts water
1 pound ham, diced
1 large onion, chopped
1 clove garlic, minced
1/2 - 3/4 teaspoon salt
1 (16 oz) can tomatoes, undrained and chopped
1 (16 oz) can tomatoes and chilies, undrained

Sort and wash the bean mix. Place all in a Dutch oven. Cover with water 2 inches past the beans and let soak overnight. Drain bean mix and add the next 5 ingredients.  Cover and bring to a boil, reduce heat, and simmer 1- 1 1/2 hours or until beans are tender. Add remaining ingredients and simmer for 30 minutes more. Sir occasionally.
Makes 8 cups.
