A French Onion Soup Recipe made in the Traditional Way

A French onion soup recipe that is original with lots of onions and beef stock, with the floated bread on the top, covered with cheese and then finished off in the oven.

French Onion Soup

90g  butter
2 large onions, sliced thinly
45g flour
8 cups beef stock
1 cup milk, boiling
pinch of salt
fresh ground pepper
1/4 cup brandy or sherry
French bread
90 g grated cheese
30 g butter, additional

Melt butter, add onions, brown without burning. Sprinkle on flour, allow to cook for few minutes. Slowly add stock, stirring all the time until it boils. Simmer for 10 minutes. Bring milk to boil and add to soup. Add salt, pepper, and brandy.

Have sliced French bread ready, sprinkled with cheese, a touch of paprika, and dots of butter. Put soup in a large casserole dish, and float bread on top. Preheat oven at 200 C (400 F). Put dish in oven until cheese has melted.
