Cream of Potato Soup Recipe with a Dash of Curry Powder

A cream of potato soup recipe that is quick and easy using just a couple of ingredients. What I like about this easy soup recipe is the use of curry powder. Adding curry powder just takes this recipe to a new level.

This soup recipe goes from boring old potato soup to something exotic and tasty. Perfect for those cold winter nights and even for those dinner parties where you can't think of anything special for that first course.

Cream of Potato Soup

2 tablespoons butter
4 large potatoes, peeled and sliced
2 medium onions, peeled and sliced
1 teaspoon curry powder
1.2 liters milk
salt and pepper to taste

Heat butter in large pot and add potato and onion. Cook until soft but do not brown. Add curry powder and stir-fry for 1 minute. Add other ingredients. Bring to the boil and simmer for 20 minutes. If curry is too hot, add 1 teaspoon sugar.

Puree in blender. Serve with hot, garlic bread.
