Easy Cream of Broccoli Soup Recipe



This cream of broccoli soup recipe is simple yet delicious, with an elegant splash of cream you will be proud to serve this soup up to any of your house guests.

Easy Recipe for Cream of Broccoli Soup

25 g butter
500 g complete broccoli head
1 onion, finely chopped
5 cups chicken stock
1 tsp sugar
3/4 cup cream
60 g grated cheese
salt and pepper to taste

Melt butter in a large pot. Cook onions until soft, but not brown. Coarsely chop broccoli and add to onions. Cover with stock, bring to the boil, cover and simmer for 20 minutes until broccoli is tender. Puree in a blender and return to pot. Add salt and pepper, sugar, cheese and cream. Heat thoroughly but don't boil and serve.
