A Broccoli Soup Recipe for Family Meals Cooked in 30 Minutes

Our broccoli soup recipe can be made from either frozen or fresh broccoli and is topped off with Swiss cheese. A quick, easy and delicious homemade soup recipe.

Ingredients:

3 cups chopped broccoli (or 2 10-ounce packages frozen broccoli)
1/2 cup diced celery
1/2 cup chopped onion
1 cup low sodium chicken broth
2 cups nonfat milk
2 Tbsp cornstarch
1/4 tsp salt
 Dash pepper
 Dash ground thyme
1/4 cup grated Swiss cheese

Directions:

Place vegetables and broth in saucepan. Bring to boil, reduce heat, cover, and cook until vegetables are tender (about 8 minutes). Mix milk, cornstarch, salt, pepper, and thyme; add to cooked vegetables. Cook, stirring constantly, until soup is lightly thickened and mixture just begins to boil. Remove from heat. Add cheese and stir until melted.

Easy Recipe for Broccoli Soup

25 g butter
500 g complete broccoli head
1 onion, finely chopped
5 cups chicken stock
1 tsp sugar
3/4 cup cream
60 g grated Cheddar cheese
salt and pepper to taste

Melt butter in a large pot. Cook onions until soft, but not brown. Coarsely chop broccoli and add to onions. Cover with stock, bring to the boil, cover and simmer for 20 minutes until broccoli is tender. Puree in a blender and return to pot. Add salt and pepper, sugar, cheese and cream. Heat thoroughly but don't boil and serve.
