Healthy Corn and Black Bean Soup Recipe for 8 using a Slow Cooker

This bean soup recipe uses canned beans, but of course you can make this soup using dried beans too. However, it does take a while to pre-soak and then cook the beans. If the beans are well dried then it could take up to 2 hours to cook them before being able to add them to your soup.

Black Bean Soup Recipe

Ingredients:

15 oz can black beans, drained and rinsed
14-1/2 oz can low sodium Mexican stewed tomatoes, undrained
14-1/2 oz can low sodium diced tomatoes, undrained
11 oz can whole kernel corn, drained
4 green onions, sliced
1 small green pepper, sliced
4 ribs celery, diced
3 Tbsp chili powder
1 tsp ground cumin
1 garlic clove, minced

Directions:

Combine all ingredients in slow cooker. Cover and cook on HIGH for 5-6 hours.
