A Quick Banana Muffin Recipe to make in 15 Minutes

A quick banana muffin recipe that takes no more than 15 minutes from start to finish. We have also given you a low-fat version as part of our healthy recipes. You can ring the changes by adding 1/2 cup of walnuts in this recipe, or you can substitute bananas for apples.

Quick Banana Muffins 

a banana muffin2 cups flour
4 level teaspoons baking powder
1/4 teaspoon salt
1/2 cup sugar
100 g butter
1 egg, slightly beaten
1 cup milk
1 1/2 cups chopped apple or banana

Mix dry ingredients in a bowl. Melt butter, add this to lightly beaten egg and milk. Tip liquid into dry ingredients. Fold in - do not over mix. Add fruit. Place in greased muffin tins and sprinkle with brown sugar and cinnamon. Bake at 220C (430F) for 12 minutes or until golden.

Best Ever Banana Muffin Recipe

3 - 4 medium bananas, very ripe
3/4 cup sugar
1 egg
1/3 cup melted butter or cooking oil
1 1/2 cups plain flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt

For this banana muffin recipe puree bananas in blender. Add sugar, egg and butter. Blend for a couple of seconds. Sift dry ingredients. Add banana mix and stir until flour disappears. Spoon into greased muffin or patty tins two-thirds full. Bake at 180 C (350 F) for 18 - 20 minutes.

1/2 cup wholemeal flour
1 egg
1/4 cup white flour
170 ml reduced fat milk
1 teaspoon baking powder
200 g mashed bananas
30g margarine, melted
1 teaspoon artificial sweetener

This banana muffin recipe uses wholemeal flour and cuts out sugar. To be honest, I have a problem with this banana muffin recipe using artificial sweeteners as it is a synthetic substitute and I am all for organic produce. However, I know that there are some readers out there wanting to save on calories, and so have left this banana muffin recipe in.

Sift the dry ingredients together. Mix together the margarine, egg, milk, banana and sweetener. Pour the wet ingredients into the dry ingredients and combine. Place spoonfuls into greased muffin tins. Bake at 200 C (400 F) for 18 - 20 minutes.
