Apple muffins with cinnamon and cloves that are quick and easy to make.  Add some raisins or walnuts to ring the changes to this apple muffin recipe.

You can make these apple muffins more healthy by substituting the flour for wholemeal flour and use 3/4 cups of honey instead of the sugar for a more healthy recipe. If you are going to use the honey, then you will also need to reduce the milk by 50% so only use 1/4 cup milk as honey has its own moisture.

Again if you want to substitute honey for sugar you will also need to reduce the temperature by 25 degrees Fahrenheit.

With the combination of cinnamon and cloves, as these muffins are baking away your kitchen will fill with the aroma reminiscent of an old-farmhouse kitchen.

1 1/2 cup flour
2 teaspoons baking powder
1 teaspoon  baking soda
2 teaspoon cinnamon
1 teaspoon cloves
1 cup sugar
1 cup chopped apple, unpeeled
1/2 cup raisins or walnuts
2 eggs
1/2 cup milk
1/2 cup melted butter

Mix dry ingredients. Add apple and raisins or walnuts.

Mix eggs, milk, and butter.

Stir all together.

Do not over mix.

Bake in large muffin pans at 200 C (400 F) for 20  - 25 minutes.
